Tourists Get A Unique Dining Experience In Dhofar During The Khareef Season

Muscat: The presence of restaurants and kiosks in Dhofar Governorate that specialize in 'Al-Madhbi' during the Khareef season presents a distinctive culinary experience for visitors. 'Al-Madhbi' stands out among the region's offerings, alongside other popular dishes favored by both locals and tourists, such as Mishakeek, Maqadeed, meat Mafoor, Maghmi, Qasabiya, Maajin, porridge, chicken and fish dishes of various varieties.

Preparation of 'Al-Madhbi' involves grilling meat, typically from camel, cow, or sheep, on stones heated traditionally. This method imparts a unique flavor to the meat, which is then served alongside rice or traditional bread.

As the Khareef season commences, 'Al-Madhbi' kiosks become ubiquitous throughout Dhofar Governorate, particularly in tourist hotspots and bustling markets. These kiosks are distinguished by their commitment to serving fresh food.

Visitors have the opportunity to observe the process of preparing 'Al-Madhbi' meat on stones, while being enveloped in the tantalizing aroma of the food and the cozy ambiance that encourages outdoor dining amidst the picturesque autumn landscape.

'Al-Madhbi' and meat kiosks play a pivotal role in enhancing the tourist experience during the Khareef season. Mahad bin Ahmed Jaboub, the proprietor of Bin "Sobar" Restaurant in Ain Arzat area, shared, "The vision behind this venture was to establish a restaurant that serves a wide array of Omani dishes and diverse food options for both locals and visitors to Dhofar Governorate year-round."

He further elaborated, "Our restaurant features an extensive menu that includes 'Al-Madhbi' with various meats and chicken, alongside an assortment of rice dishes such as white rice with country butter, Mandi, Makbous, and spiced varieties, all considered signature dishes loved by both tourists and locals."

Ahmed bin Abdullah Al-Shahari, the owner of Wadi "Dhirut" restaurant in Ateen area, commented, "Our establishment offers a plethora of dishes that cater to the tastes of both locals and visitors, especially during the fall season, with a focus on using fresh, locally sourced ingredients."

He added, "Among our most popular offerings are 'Al-Madhbi' with an array of meats and chicken, complemented by various rice dishes including white rice with country butter, Mandi, Makbous, and spiced varieties, all of which are cherished by both tourists and the local community."

Additionally, he highlighted the traditional preparation of 'Al-Madhbi' and the famous local dish / Muajeen, both of which are prepared using age-old techniques known to the local populace.

The procedure commences with the preparation of the meat, which involves cooking it until it reaches a state of dryness. Subsequently, the fat extracted from the slaughtered animal is subjected to heat until it liquefies. Following this, bacon and salt are incorporated into the mixture and thoroughly mixed until all ingredients are uniformly cooked. Once the mixture has been prepared, it is then allocated to specific storage areas for long-term preservation.
